According to a study by Mintel, 67% of Brazilians are interested in healthier dessert options. This includes artisan gelatos made with natural ingredients, low fat content, lactose-free and vegan versions, which are increasingly sought after, especially in the summer.
The Gelato Borelli Vitória located in Shopping Vitória kicked off the new year with a bang. According to the partner of the establishment, Vitor Guedes, this is the time when gelato consumption peaks due to the heat, and even with the rain we had in January, the foot traffic increased significantly. "We prepare for the most sought-after flavors like fruits, chocolate, and pistachio," he says.

The restaurant chain Coco Bambu ES also launched its own gelato last year, and the dessert is highly requested. Among the flavor options are: cream, brigadeiro, cookies and cream, and pistachio, along with new flavors of dulce de leche and cheese with guava paste. One of the partners of the chain, Pedro Soares, states that the production is in-house and follows the tradition that makes the experience unique. "The gelatos are made with cream, milk, and butter and served at lower temperatures than traditional ice creams," he claims. "And pistachio is by far the most popular," he guarantees.
