On October 16, World Bread Day is celebrated. History tells that the first record of fermented bread was in 4000 B.C. by the Egyptians, and the Romans brought the custom to Europe. Today, bread is a popular and versatile delicacy worldwide, as it is essential for some at breakfast and can be consumed at all meals, including lunch, dinner, and even as an appetizer.
Currently, bread has gained its status on the table, and recipes have become more refined. Chef Patrícia Santos Neves, from the artisanal bistro and bakery Empório Joaquim, located in Praia do Canto, highlights that the production of these novelties is also a way to promote a new type of consumption, showcasing what differentiates artisanal products from traditional ones and providing more options for customers and consumers. "In addition to creating various recipes, we also use French flour in all our breads," emphasizes the chef.
Among the most unique and exclusive flavors are pumpkin with rosemary and honey, olive with lemon zest (made with three types of the fruit), rustic fig and walnut bread, 100% whole grain with and without nuts, mini sourdough breads, sweet bomboloni filled with dulce de leche and cinnamon rolls, in addition to classic Australian breads and French baguettes.
Natural fermentation stands out, along with the various flavors and combinations. "Natural fermentation breads stand out because they are made with raw materials that act as a perfect natural preservative, making the food last longer and reducing the number of times people need to go out to replenish their 'stock'," emphasizes the chef.
She mentions that the demand for bread has increased, especially because, with the pandemic, her establishment implemented delivery and take-away services (customers order and pick up on-site). "In addition to thinking of new ways to sell, products reach customers without them having to leave home," explains the specialist.
Another novelty is the consultancy that the bistro is receiving from bakery specialist Felipe Oliveira Boulanger. "He came to enhance the work I do and has already provided his services in luxury hotels such as Four Seasons Hotels and Resorts in São Paulo and Emiliano in Rio de Janeiro," she explains.
