A Casa Graviola, a restaurant chain focused on healthy, vegan, and vegetarian food, presents its new 2020 menu starting on November 24. The menu includes various options for appetizers, main courses, and desserts such as salmon tartare, salads, shimeji ragu, tilapia fillet with plantain puree, brownie, cheesecake, pizza, hamburger, chicken, waffle made with banana dough and cane syrup, smoothies, açaí, natural juices, and tea, among others.
The highlights of the 2020 version are the Crispy Chicken (R$ 52), a dish that includes organic chicken breast with a cornflake crust and sun-dried tomatoes, mashed potatoes with saffron, mushroom sauce, sautéed spinach, a green salad, pumpkin and sunflower seed farofa. For those who enjoy a little appetizer before the main course, the new addition is the Cassava and Shimeji Croquettes, which are made of baked cassava balls filled with mushrooms, coated with sesame seeds and served with tofu and paprika aioli. "It's a very tasty appetizer that pairs perfectly with our refreshing drinks," emphasizes one of the partners running the restaurant, Letícia Salgado.
Also worth mentioning is the Strawberry Tartare (R$ 28), made with chopped strawberries, dark chocolate ganache, nut crunch, tapioca ice cream, and warm almond milk.
Among the salads – which are highly requested at the location – the Da Terra features organic ingredients directly from the garden. "It is prepared with Japanese pumpkin, broccoli, chickpeas, corn, carrot, sweet grape tomatoes confit, zucchini, and eggplant, all roasted, with tahini and cane syrup dressing," explains the other partner of the restaurant, Lorena Cota.
It is also important to highlight that it is a principle of the Casa Graviola chain to use high-quality ingredients in the preparation of its recipes, such as organic olive oil, pink salt, etc.
Here in Espírito Santo, local production is utilized and valued. "The mountainous region of the state is rich in agricultural production, and we use flowers, sprouts, mushrooms, organic chicken, berries, and Camocim coffee from municipalities like Santa Teresa and Domingos Martins," explains Letícia.
Another attraction is that the menu contains all the information for those with food intolerances, such as the presence of lactose, gluten, among others.
