Whether for the convenience of those living alone or for those who like to buy small portions, vacuum-sealed food packaging appeals to many and, in addition, is good for health. Known as freeze-dried foods, endocrinologist and sports medicine specialist Gisele Lorenzoni explains their process.
"Generally, to reach the form in which they are purchased, vegetables and fruits, grains are frozen, then undergo a low-pressure air process, where the frozen water goes directly to vapor, thus preserving flavor, color, and texture, as well as their nutritional value," explains the doctor.
Gisele emphasizes that besides being good for health, this type of food is ideal for those who need to eat outside the home and want to eat well. "You can take it to work and plan a quick meal or on an outing." The warning is to pay attention to what is freeze-dried versus dehydrated. "There is a difference, and dehydrated foods, due to being exposed to high temperatures, lose nutrients," she reports.
